Le 1947 at Cheval Blanc is the reference point. Chef Yannick Alléno, three Michelin stars, 24 covers. The room is intimate to the point of feeling private. The menu runs to multiple courses and the wine list is extraordinary.

It is expensive - expect €380 for the tasting menu before wine. But the experience is complete in a way that few restaurants anywhere in the world manage. Every detail is considered, from the moment you arrive to the moment you leave.

Les Airelles: the Most Complete Address in 1850

Les Airelles is the hotel that defines Courchevel at its most rarefied. The restaurant - now with Pierre Gagnaire's signature across it - matches the setting. The decor is deliberately theatrical: Viennese chalet aesthetic pushed to its logical extreme.

What makes Les Airelles different from the other palace restaurants is the overall experience. Dinner here is not just a meal. The service is exceptional, the crowd is international, and the combination of mountain setting and three-star cooking is difficult to find anywhere else.

Book early. Tables at Les Airelles during Christmas and February half-term are among the hardest reservations in any alpine resort.

Le Chabichou: the Local Institution

Le Chabichou has been here since 1963. Chef Stéphane Buron holds two Michelin stars and has done so for years. This is not the flashiest address in 1850, but it is one of the most consistent.

The cheese trolley at Le Chabichou is genuinely worth coming for. The Savoyard selection and the quality of the affinage set it apart. For guests who want serious French cooking without the palace hotel setting, Le Chabichou is the natural choice.

Le Kintessence: the Surprise

Le K2 Palace looks like a Himalayan monastery dropped into the Alps. The restaurant, Le Kintessence, matches that ambition. Chef Jean-Rémi Caillon works with French and Asian influences in a way that feels genuinely original rather than forced.

The room fits 30 covers. The setting is spectacular. It is consistently underrated compared to Le 1947 and Les Airelles, which means it is sometimes easier to book.

The Honest Notes on Booking

Peak weeks in Courchevel are Christmas, New Year, February half-term and Easter. During these periods, the top restaurants are fully booked weeks in advance. Showing up and hoping for a table will not work.

The standard advice is to book 4 to 6 weeks ahead for three-star restaurants and 2 to 4 weeks for two-star. In practice, the real answer is: book the moment your chalet is confirmed, regardless of how far ahead that is. If your trip is in February, book in November.
